Almost Instant Raw Vegan Coconut Chia Pudding

  • 1 cup shredded coconut
  • 2 cups water
  • ¼ cup + ⅛ cup chia seeds
  • 1 Tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • Some fruit toppings of your choice
  1. Add the shredded coconut or coconut flakes (whichever one you have on hand) and water into a blender and blend for 3 minutes.
  2. Strain the milk with a nut milk bag or a sieve.
  3. Quickly rinse off the blender carafe and pour the coconut milk back into the carafe. Add in the maple syrup, vanilla extract, and chia seeds. Blend on a low speed for a couple minutes until the chia seeds start to gel up and the mixture becomes thick.
  4. Pour the mix into a glass or a bowl. Top it with your favorite fruits and eat right away if you don't mind the thinner consistency, or let it chill in the refrigerator for 1-2 hours to let it set up more.
Keeps for 3 days in the refrigerator.
