Raw Vegan Sour Cream

- 1 cup cashews
- ¼ + ⅛ cups water
- 3 Tablespoons lemon juice (about a juice of 1 large lemon)
- 1 Tablespoon apple cider vinegar
- ¼ teaspoon salt
- Soak the cashews for 2-4 hours in plenty of water. Drain and rinse well.
- Add all the ingredients into the blender and blend until smooth.
- Store in the refrigerator in an air-tight container.
Keeps for 1 week in the refrigerator.
