Raw Vegan Sour Cream

  • 1 cup cashews
  • ¼ + ⅛ cups water
  • 3 Tablespoons lemon juice (about a juice of 1 large lemon)
  • 1 Tablespoon apple cider vinegar
  • ¼ teaspoon salt
  1. Soak the cashews for 2-4 hours in plenty of water. Drain and rinse well.
  2. Add all the ingredients into the blender and blend until smooth.
  3. Store in the refrigerator in an air-tight container.
Keeps for 1 week in the refrigerator.
