Raw Gegan Matcha Green Tea Avocado Pudding

  • 1 ripe avocado
  • ¾ cup Medool dates
  • 1½ teaspoons matcha powder
  • ½ teaspoon non-alcohol vanilla extract
  • ½ cup or more of water (or soak water from the dates)
  • A pinch of salt
Matcha syrup
  • ½ teaspoon matcha powder
  • 1 Tablespoon maple syrup
  1. Soak the Medjool dates in water for about 30 mins until they soften.
  2. Place all the ingredients except for the Matcha powder into a food processor. Process until smooth. Scrape down the sides with a spatula in between pulsing.
  3. Add the Matcha powder and run the processor until it gets evenly distributed.
  4. Place into containers and chill in the refrigerator for a 3-4 hours.
  5. Make the Matcha syrup by mixing the Matcha powder with maple syrup. Drizzle it over the pudding right before serving.
Drizzle the Matcha syrup right before serving. If the syrup sits on the pudding too long before serving, it will get completely absorbed by the pudding. The Matcha syrup is pretty sweet, so adjust how much Matcha syrup to drizzle on the pudding according to your taste.
