Raw Vegan Virgin Orange Mojito Popsicle

  • 2½ cups freshly squeezed orange juice (about 6-7 oranges)
  • 1 juice of lime
  • ½ cup lightly packed mint leaves
  • 3 Tablespoons agave nectar or maple syrup
  1. Juice the oranges using a reamer, making sure as much of the meat gets in.
  2. Add the freshly squeezed orange juice, lime juice, mint leaves, and agave syrup into the blender Blend until the mint leaves become fine.
  3. Transfer the mixture into a measuring cup so it is easier to pour into the molds.
  4. Pour the mixture into a popsicle mold, and lightly bang the mold on the counter to get rid of any air bubbles. Let it sit for about 30 minutes, so that the fine mint leaves can come up to the surface. This will help create a nice gradual gradation from orange to green.
  5. Place the wooden sticks, and pop it in the freezer. Freeze for about 6 hours or until the popsicle solidifies.
Using agave nectar as the sweetener will keep the orange color lighter.
