It’s less than 2 weeks until Valentines day! So on this post, I wanted to share something chocolaty! This raw vegan chocolate avocado pudding fits the bill. It’s rich, creamy, and chocolaty! What more can you ask for? Are you thinking avocado in a dessert? Eww! I know, I was there too. But don’t be afraid! You won’t taste it at all, not that it tastes bad! It’s purely there for the rich and creamy texture and even if I never told you, you wouldn’t be able to tell. Plus, I didn’t skimp on the cacao powder, to make it extra chocolaty. To me, there’s no such thing as too much chocolate. It’s so decadent and your non-vegan friends will love it too!
Okay, so I have set the tone with how rich, decadent, and chocolatey this recipe is, but the best part is, it’s really good for you! It’s sweetened with purely dates, uses healthy fats from avocado, and is loaded with antioxidant rich raw cacao powder!
Raw cacao powder is all the hype right now, but what’s the big deal? Cocoa powder and raw cacao powder are both made from the cacao beans, but how it’s processed is different. Cocoa powder is roasted, but raw cacao powder is dried in low temperature, keeping the enzymes and maximum nutrients intact. Raw cacao powder is abundant in antioxidants, beating out blueberries, red wine, and green tea for the amount. It also contains minerals like iron, calcium, magnesium, and more. It lowers your risk of heart disease and improves your mood. So chocolate is good for you, if it’s in its purest form!
Now, to make it. Step 1. Dump all the ingredients into the food processor. Step 2. Blend! Aaaaaaannnd done! Look at that pudding! It’s so chocolatey looking!
Transfer it into a bowl or glass of your choice, and refrigerate for 2-3 hours. You can skip the refrigeration and eat it straight away, if you’d like. Mine usually doesn’t make it to the refrigerator. Only the left overs do:) Top it with fruits, nuts, coconut flakes, cacao nibs, whatever you fancy!
Next recipe post will be chocolate orange pudding, a variation of chocolate avocado pudding recipe. It was a huge hit at a raw food class I taught previously at Rawkin Juice. Stay tuned!
- 1 fully ripe and soft avocado
- ¾ cup dates
- 2½ Tbs raw cacao powder
- ½ cup water or the soak water from the dates
- A dash of vanilla extract
- A pinch of salt
- If your dates are firm, soak them in water until they become soft, about 1 hour.
- Add all the ingredients into the food processor, and blend until smooth.
- Transfer into a bowl or glass of your choice. Refrigerate for 2-3 hours.
You can eat it straight away without refrigeration, if you'd like.
Feel free to top it with fruits, nuts, coconut flakes, cacao nibs, whatever you fancy!
