These raw vegan, virgin orange mojito popsicles will make a perfect snack this summer! The sweetness and tanginess of freshly squeezed orange juice and fresh mint leaves makes a super refreshing combo. It’s raw vegan so we are keeping it alcohol free in other words, rum-free, but still orangey, minty, and delicious! Best part is, it’s tasty and good for you! The vitamin C and citric acid from the orange juice will replenish your tired body from the heat and the mint leaves will soothe your stomach. Just by eating these popsicles, you can care for your heat exhausted body. If that doesn’t sound like a perfect summer snack, I don’t know what is.
Now let’s make these orange minty gems! Juice the oranges using a reamer, making sure as much of the meat gets in.
Add the freshly squeezed orange juice, lime juice, mint leaves, and agave syrup into the blender and blend until the mint leaves become fine. Transfer the mixture into a measuring cup so it is easier to pour into the molds.
Pour the mixture into a popsicle mold, and lightly bang the mold on the counter to get rid of any air bubbles. Let it sit for about 30 minutes, so that the fine mint leaves can come up to the surface. This will help create a nice gradual gradation from orange to green. But if you don’t have time, you can skip it. Place the wooden sticks, and pop it in the freezer. Freeze for about 6 hours or until the popsicle solidifies.
Take the popsicle out of the mold when it’s ready! If you have difficulty removing it from the mold, just run it under cold water for a quick second. It should slide right out!
